It takes so long now to cook and I don't always have the energy. What do you eat? I am looking for ideas for good nourishing meals that don't take hours to prepare. Most prepared meals at the grocery store are full of fat, salt and/or sugar. Any suggestions as to what we can eat without hurting our health? Any suggestions would be appreciated.

Don't eat processeed foods. I make a stew full of fresh veg and meat for partner. It's healthy and nourishing

Try buying frozen packages of fish or chicken breasts at Costco or other retailers. Then buy, when available, pre-cut veggies or fruit, and berries, pre-washed baby spinach, etc. My partner and I work together cutting up the components as needed and combine spinach, carrots, zucchini, apples, slices of red onion, tomatoes, blueberries, raisins, craisins, wasabi peas, mushrooms, pineapple, canteloupe, honeydew, peppers,etc. Be creative! Get all those real food colors in the salad: green, red, orange, yellow. Dress that salad with a vinaigrette. We tend to avoid evening carbs like rice or potatoes, but if you like, e.g., rice, get an automatic rice cooker. So, start the rice first, then the fish or chicken(thaw beforehand), then cut up and combine the salad components. Do this together as a team, it is a great bonding experience since you are putting together a very tasty and healthy meal. About the time you finish the salad, the rice and meat are done. Load up your plates and dig in. Make enough for 2 meals and the next night you have much less work. Or have leftovers for lunch.

Thank you for sharing your ideas. I am struggling with fatigue and barely have the energy to cook a meal at the end of the day. I am trying to cook simple and use a slow cooker too. It is just my husband and me now and he works evenings. So meals are very different. Salads and bread are a great option.
