I am not a phone pro but I do have Android and I do use the speak to test. I just use google assistant for all of my email/text. When I use this function I click on the compose or answer a text/email a keyboard pops up. I click on the microphone and I start to talk when it flashes and tells me to start. When I am finished I click on the mic to stop it. You can look at what you did and make any edits. When you are finished send it. The more you use it the more accurate it becomes. You have to be patient and you will more than likely become frustrated until it gets to know you. I hope this helps you. It requires Android 12 or later.
